With Fall right around the corner,I’m in the mood for some traditional fall desserts. Fall, one of my favorite seasons, the scents, the cutting of the corn and beans (we live in a rural area), the bonfires and camping out. I just taught at our Christian School this week on Genesis 1:14: “And God said, Let there be lights in the firmament of the heaven to divide the day from the night; and let them be for signs, and for seasons, and for days, and years.” The season of fall, and I think Pecans!!! So, in honor of Fall and Pecans here is the yummiest Southern Pecan Pie you will ever find! Just ask my hubby, it’s his Grandma’s recipe! I actually made the crust from scratch this time (I’m not usually that Betty Crocker-ish) but I was out of store-bought pie crusts. I used Ina Garten’s from Food Network, Perfect Pie Crust Recipe.
What you need for Pie crusts:
12 TBSP butter
3 Cups flour
1 TBSP sugar
1/2 c shortening
8 TBSP ice water
Cut up the butter, then in a food processor mix the flour and sugar by pulsing a few times. Then, slowly add in the butter and shortening and finish off with the ice water. I just hit the button “Pastry” on my processor and it did it for me. When it made a ball I pulled it out and wrapped it in plastic wrap and put it in the fridge for a while.
After doing that I separated it into 2 halves and rolled it out to make my crusts. My pecan pie recipe also makes 2 pies, so this worked out perfectly.
1 c sugar
1 1/2 c corn syrup: 1 Cup red syrup and 1/2 c white
1/2 stick butter
1/2-1 cup pecans
Beat the eggs vigorously, then add the sugar, corn syrups and melted butter. You can use a mixer but this time I didn’t feel like getting the beaters dirty so I just mixed with a fork. Then, here is the key: crushing your pecans to mini-pieces. Pour that in, give it a quick swirl and divide it evenly among the two pies.
Bake it at 350 degrees for 30-35 minutes until the middle is set. (If you are like me and have no idea what that meant, give it a little jiggle and if the middle moves keep it in there!!!!) Then voila, set out to cool and you are in Pecan Pie Heaven!!!
